2/3 cup powdered milk
1 cup pumpkin puree
2 eggs
6 Tbsp. whole wheat flour
1 tsp. baking powder
1 tsp. pumpkin pie spice
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
6 Tbsp. sugar
1/2 cup shredded zucchini or carrots
1/3 cup chocolate chips
1 tsp. vanilla
Mix together, but do not overmix. Spray muffin tins with Pam. Bake at 375 for 15 minutes
Makes 12 muffins. 2 points each
